Zucchini Bread using Chobani Yogurt

My son had come home from school one day and said he tried zucchini bread and loved it. He said he loved it so much that he ate 3 pieces.

I will admit, I thought this child was lying to me. He has done this before, said he tried something at school and liked it. I turn around and make it and he thinks its gross. I of course was skeptical.

I decided to try one more time. I mean at least if he didnt like it, I would eat it. I probably shouldnt eat a whole loaf, but I would if needed.

I went all over the net trying to find the perfect recipe and of course I found one but had to make changes and make it my own.

C-man LOVED it! I had to stop him from eating it since it was right before dinner. I am so glad that he enjoyed it and I now have another way to get veggies into him!

Zucchini Bread

1 ¼ cup unbleached flour

1 cup whole wheat flour

½ tsp salt

1 ½ tsp baking soda

½ cup canola oil- You can also use coconut oil

¾ cup sugar- I used Organic that I get from Costco

3 eggs

2 tsp vanilla

3 cups grated zucchini

1 6oz tub of Blood Orange Flavor Chobani Yogurt- TRUST ME on this!

Topping Ingredients:

2TB Sugar

2TB Light Brown Sugar

½ tsp cinnamon

 

Preheat oven to 350 degrees. Spray your bread pans with pam cooking spray.

Combine all dry ingredients in a bowl and stir to combine. Add in eggs, oil, vanilla, and yogurt. Stir to combine. Add Zucchini last, stir gently. Pour mix into bread pans. Mix the Topping ingredients together and then top each loaf with the topping mixture. Bake for 50-60 minutes, checking with a tooth pick to make sure it comes out clean. Let cool in the loaf pans for 10 minutes before moving to a cooling rack to finish cooling.

Serve with a spread of butter and enjoy!

**Recipe above can make 2 loaves. I did one big loaf and 2 small loaves.

 

You really must try this recipe out. Do not let the yogurt scare you. It is mainly for moisture and a touch of orange flavor. The bread is so moist and fluffy. This is a great recipe this summer to use up all that zucchini that comes up in your garden!
