Brown Sugar Glazed Pork Loin

Pork loin is one of those magical meats. So moist and delicious it should be against the law to consume it.

It can also be one of the toughest meats to cook. You do not want to over cook this baby one bit. The best way to cook it and keep it moist is the crock pot. Man I love my crock pot.I do own 4 of them. Anywhoo….

This meal is amazing. Even two of my 3 kids loved it. They thought it tasted like turkey. Whatever floats their boat and gets them to eat it, right?

My hubby was so excited for the leftovers today! I am pretty sure he is making one tasty sandwich with them right about now.

Brown Sugar Glazed Pork Loin

Ingredients:

1 (2 pound) boneless pork tenderloin
1/2 teaspoon ground sage
1/2 teaspoon pink Himalayan salt(regular salt with work but the pink Himalayan is super yummy and MUCH better for you)
1/2 teaspoon fresh cracked pepper
2 cloves garlic, crushed
1/4 cup water
Glaze
1/2 cup light brown sugar
1/4 cup good balsamic vinegar
1/2 cup water
1TB cornstarch
2 tablespoons low sodium soy sauce- I used a gluten free sauce
Directions:
Combine sage, salt, pepper and garlic. Rub over roast. Place in slow cooker with 1/2 cup water. Cook on low for 6-8 hours. About 1 hour before roast is done, combine ingredients for glaze in small sauce pan. Heat and stir until mixture thickens. Brush roast with glaze 2 or 3 times during the last hour of cooking. Serve with remaining glaze on the side.
