I really enjoyed this dish! It was right up my ally since I LOVE Mexican food. I also loved to see a alternative to the deep fried tostados shells! I would of never guessed you could make them on a George Foreman Grill!
Chicken and Avocado Tostadas
4-6inch corn tortillas
2 tbsp cooking oil- I used EVOO
3 tbsp taco seasoning
4- boneless skinless chicken breast halves- I used chicken tenderloins
4 cups baby spinach
1 avocado, pitted, peeled and sliced.- I put some fresh lime juice on my slices.
1/2 cup of your favorite salsa
Directions
1. Brush tortillas on both sides with the oil and sprinkle with half of the taco seasning. Brush the chicken with the remaining oil and sprinkle remaining taco seasoning.
2. Place tortillas on your grill(medium-high heat). Grill for about 2 minutes or until crisp.
3. When the tortillas are finished, grill chicken until cooked through. My tenderloins took about 7-10 minutes on my George Foreman grill.
4. Divide the spinach between the tortillas, add shredded chicken, avocado slices and salsa on top.We also added a touch of shredded low fat mozzarella cheese.
YUM!
