Coriander Turkey Breast

I really enjoyed this meal.

A LOT!

It was hard to just eat my serving size in this one. Luckily, the leftovers were just as good. We used the leftovers in salads and pitas!

Coriander Turkey Breast

1-2 to 3 lbs fresh or frozen turkey breast, thawed
2 teaspoons of ground coriander
1/2 tsp onion powder
1/4 tsp chili powder
Dash of Ground Red pepper
1 tbsp margarine
1 tbsp lemon juice

Directions
1.If there is any skin or excess fat on the turkey breast, remove. I used a Jeanie-O Turkey Breast so it was ready to use. In a small sauce pan, cook coriander, onion powder, chili powder and red pepper in the margarine for 1 minute. Remove from heat and stir int he lemon juice.
2. Spread the mixture all over the turkey breast.
3. In a covered grill, arrange medium hot coals around a drip pan. Place turkey breast on grill rack over drip pan but not over the coals. Lower grill hood and cook until meat thermometer reaches 170 degrees. This could take anywhere from 1 1/4- 1 3/4 hours.

Notes: I cooked this on my George Foreman Grill. I closed the lid on my Grill and walked away. I did check on it every now and then but cooked it for 20-30mins. I also turned and changed the position of it to get nice grill marks on all sides.
