Grill it Up: Beef Fajitas

Mexican food is big in our house.

Actually it is our favorite. We could eat it for almost any meal!

C-man has been getting better about eating meat and one of his favorites is beef fajita nachos.  I decided to grill some up and give it a whirl, hoping he would love it as much as a Mexican restaurant.

The verdict? C-man loved it. The meat was so juicy and tender with so much flavor. I am so glad the marinate did not turn him off which tells me I did pretty good at getting close to most restaurants we have eaten at.

Beef Fajita Marinate

1/2 cup bottled Greek Italian Dressing- I used Wish Bone brand. Trust me. Make sure it is the Greek Italian Dressing.
1 Tbsp chili powder
1 tsp ground cumin
1/2 tsp brown sugar
1tbsp Lawry’s Season Salt- this has garlic, onion, salt, pepper, paprika,etc
1/8 tsp garlic powder

***2lbs of beef skirt steak for fajitas- This marinate would also work on chicken. I suggest bonelesss, skinless chicken thighs.

Wisk all your ingredients together and pour over meat in a zip lock bag, seal. Let marinate for at least a hour but over night is best.

Heat grill to medium heat and grill steak to desired doneness. Skirt steaks are typically very thin so this will not take long. 10 minutes at the most.

Remove from grill and let rest for 10 minutes. Slice across the grain into strips for fajitas or cut into chunks for nachos.
