Guacamole is the most delicious thing out there. Seriously. I used to not like it though. It took me being pregnant with C-man to really enjoy and appreciate the deliciousness of guacamole. Most people thing that it is really bad for you, but actually guacamole is really good for you. Its the crispy tortilla chips that you use to scoop up the goodness that is actually bad for you. I actually like to use Garden of Eatin Blue Corn Tortilla Chips which is made with Organic Blue Corn.
Avocados are one of the “good” fats your body actually needs. Avocados contain Magnesium, Lutein, Vitamin E, Monounsaturated Fat, Vitamin K, Folate, Potassium, Vitamin C and Vitamin B6.
Guacamole is one of the easiest things to make and you can tailor it to your tastes.
Here is what I traditionally use to make guacamole:
Avocados
Red Onion
Tomato
Cilantro
Jalapeno Pepper
Salt
Pepper
Lime Juice
Easy as can be. Mash up those avocados, squeeze on some lime juice to keep them from turning brown too fast plus it gives them great bright flavor. Then I add the other ingredients(all chopped of course) and salt and pepper to taste. Easy. Nutritious and Delicious!
** No tomatoes on hand? Use some Rotel!

You’re forgetting the garlic and a splash of habanero sauce! Plum tomatoes are the best to use with guacamole, cilantro is really up to taste.
