I am well aware that it is actually Tuesday but I took yesterday off.
Ok, so I took off 5 days. I deserved it.
Now it is back to the daily grind and while I enjoyed the time off, I am glad to be back in some sort of routine.
The Menu Plan this week will include lots of veggies since I am giving up meat again.
Here is what we have planned:
Monday- Grilled Pizzas
Tuesday- Grilled Salmon with Cauliflower Rice Pilaf, and veggies
Wednesday- Garlic shrimp with lemon orzo salad and asparagus
Thursday- Zucchini and Squash Ribbon Pasta
Friday- Zucchini burgers and sweet potato fries
Saturday- Grilled Stuffed Poblano Peppers.
Sunday- Finger Food dinner- cheese, crackers, fruit,etc.
