Menu Plan Monday~ Back on Track

I just got back from Austin Texas where I attended Fitcation.

Talk about a amazing time and I enjoyed meeting so many great women.

This week is about getting back on track and getting into a summer time groove. Today is the first day and it is not going too well. I need to take a deep breath, make some adjustments and we will be fine though.

Here is a rough menu plan. Rough  meaning it might changes since I have not been  to the store yet for this week but this is what I want to have. ;)

Monday- Lemon Grilled Salmon with Corn Salad and Roasted Brussels Sprouts

Tuesday- Grilled Turkey Burgers on a bed of spinach and other salad fixings and sweet potato fries.

Wednesday- Grilled Chicken Salad

Thursday- Spaghetti

Friday- Fish Tacos with Cilantro Cream Sauce

Saturday- Leftovers or homemade pizzas.

Sunday- Grilled Veggie Paninni and hopefully French Onion Soup
