Sorry this is late going up. We had a death in the family and had to go out of town this weekend.
First, let me all let you know that we are going meatless again. We are hoping to go the rest of the month with no chicken, red meat, or anything in that nature. We will still have eggs, milk, cheese and fish however. I am hoping I can convenience hubby and the kids that the food will be spectacular and go longer than a month.
Here is what I have planned this week:
Monday- We literally just walked in the door so we will most definitely have to go out tonight to get something.
Tuesday- Kale and Bean Soup with a crusty bread.
Wednesday- Ginger and Cilantro tilapia, couscous and asparagus
Thursday- Potato and Cheese Pierogies in a garlic chive sauce and roasted Brussels sprouts
Friday- Stuffed Shells with Salad and crusty bread
Saturday- Quinoa Burgers, sweet potato fries and grilled zucchini
Sunday- Vegetarian tacos with black beans in the crockpot.
