I think I have a new favorite vegetable!!! I have always been afraid of Brussels sprouts and I have no idea why. They are so delicious and full of Vitamin A, C, folic acid and fiber. Yum Yum and oh so good for you!
Please, be bold, be brave and try Roasted Brussels Sprouts!
Roasted Brussels Sprouts
1- Bushel of Fresh Brussels Sprouts, cleaned and cut in half
2-3 cloves of garlic, minced
2-3 TB of Extra Virgin Olive Oil
sea salt and pepper to season
Heat oven to 400. Toss Brussels sprouts with the garlic and oil. Place in a casserole dish and roast in the oven for 15 mins or so until desired doneness. I like mine with a little bit of bite left to them. Once done season with salt and pepper. I at this point, turned on my broiler to give them a bit more brown color.
*Update: I recently made this recipe again and added some bacon bits(the real kind) while they were cooking. YUM!

Ooooh, I adore Brussels Sprouts … and your method of cooking looks yummy! I’ll bet that the roasting brings out the sweetness of these little guys!

Just made these tonight and they were delish! I am not used to using fresh veggies. But, this was such an easy recipe to start with. Word of advice though don’t get distracted when your broil them.
Those are my new fave too….yum-yum! Wish my family liked them as much as me!!!
