Salsa Chicken

I got this recipe from the Mamavation Nutritionist Alysa at Inspired RD.

I absolutely loved this dish. It was so easy to throw together and as a added bonus hubby said it was yummy!

I am definitely adding this to our rotation from now on!

Next time I am going to serve it over rice or quinoa.

Salsa Chicken

Ingredients:
-1 lb. boneless skinless chicken breast, cut into 1-inch pieces
-2 tsp. olive oil
-2 cups frozen corn
-1 can lowest sodium black beans, rinsed
-1½ cups salsa
-1 tsp. ground cumin
-1/2 cup fresh cilantro, chopped
Directions:
1. Heat oil in large saucepan over medium-high heat. Brown chicken 2-3 minutes on each side.
2. Add cumin and stir to cover chicken.
3. Add salsa, corn, and black beans. Bring to a boil. Reduce heat and simmer, covered until corn is heated through (about 5 minutes).
4. Serve over cooked pasta with cilantro sprinkled on top.

* I sprinkled the chicken with the cumin before cooking it. I then browned it on both sides(making sure it is cooked through) and removed from the pan.  I let it rest a bit and then cut into cubes. I then added sliced onions to the pan and a bit of chicken stock to deglaze the pan. After a few minutes I added minced garlic in. Once that cooked a bit, I added everything to the pan and let it heat through. I also added a touch of cheese on top of each serving.
