Tasty Tuesday: Black Bean Hummus
I have never been a fan of real hummus. I had tried all kinds. If it involved chickpeas(which I do not like anyways) I was not eating it.
I recently heard someone talk about black bean hummus and I knew I could handle this one since I love beans! I borrowed the tahini from my neighbor because I did not want to buy a big jar in case I did not like it.
I have to say I am pleased with this recipe. I made changes to 2 or 3 I found online and now even after making it I think I will be making more changes to the next batch as well. I am so glad I have found something healthy and yummy for a nice snack!
Black Bean Hummus
- 1/2 cup chopped fresh cilantro, divided
- 2 tablespoons tahini (roasted sesame seed paste)
- 2 tablespoons water
- 2 tablespoons fresh lime juice
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 (15-ounce) can no-salt-added black beans, rinsed and drained
- 2 garlic clove, peeled
- 1/2 small jalapeño pepper, seeded
Place 1/4 cup cilantro, tahini, and next 8 ingredients (through jalapeño) in a food processor; process until smooth. Spoon into a bowl; sprinkle with remaining 1/4 cup cilantro. Serve with veggies and/or pita chips.
Next time I make this I plan on roasting the garlic to bring out more flavor, maybe adding more cumin(I love cumin) and maybe even more of the jalapeno for more heat! I also added a bit of water when mixing since I was using my blender and not a food processor. I really do not like it very thick anyways so this is a personal preference.
