What’s Cooking? March 3rd Edition #menuplanning #food

Well, Mother Nature has fallen off her rocker again.

We had a gorgeous weekend and sunshine but this morning it is in the 20’s. M even got a little sunburn on her cheeks from playing softball all day Saturday but today is is bundled up in a coat.


I am just grateful I had not put any plants in the ground for the garden yet! I think that will be the project the kids and I work on during Spring Break.


I made an adjustment to my menu plan this week since tonight is going to be freezing. That also means I have already ran to the store this morning for a few things to get for tonight’s meal.


Here is what we have cooking this week:

Monday– Italian Chicken Soup with Garlic Bread Chips

Tuesday– Greek Style Meatballs and Zucchini Fritters (recipe development)

WednesdayEggplant Parmesan with salad.

Thursday- Fajitas in the Crock Pot

Friday- Kids have a babysitter coming so they will have pizza while hubby and I are headed to the rodeo to see Usher!

Saturday– Chicken pesto with Gluten Free Penne

Sunday Ribs in the Crock Pot and Grilled Veggies
